The potato omelette also known as Spanish omelette could have been invented during the Carlist Wars and the general Tomás de Zumalácarregui could be the person who popularize the potato omelette.
We don’t know if it is true or not, but the most important thing we know is that the potato omelette is one of the most loved dishes in the Basque Country (Wikipedia says…)

We’ll start with the five ingredients you need. Actually you need only four, as onions are not compulsory, but we LOVE them! (and if you add some garlic… it will be amazing!).
How to cook a potato omelette:
- Peel the onion.
- Chop the onion.
- Peel the potatoes.
- Chop the potatoes.
- Fry the potatoes with the onion (actually you must boil them in oil)
- Beat the eggs.
- Mix the eggs with the potatoes and the onion.
- Add a pinch of salt.
- Heat a pan.
- Add some oil to the pan.
- Fry the mix (both sides).
